Thanks to Monica over at
Monica on the Go, I conjured up this little snack for the first time. The pumpkin pudding is quite delicious and it hit the spot as an after dinner alternative to a non-healthy dessert. I suppose you can add or subtract as much yogurt as you'd like.

I must say, after a bit of enhancement with some cinnamon, it turned out very good. I am sure I will be keeping some extra pumpkin on hand just in case of an unexpected snack attack.
